Ingredients:
4 large sweet potatoes, (Pressure cooked in Instant pot for 4 mins)
1/2 stick softened plant-based butter
1/2 cup coconut or brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
Topping:
1 cup chopped pecans
1/4 cup all-purpose flour
1/4 cup rolled oats
1/4 cup brown sugar
1/3 cup softened plant-based butter
1/2 teaspoon ground cinnamon
Pinch of salt
Instructions:
Preheat your oven to 350°F (190°C).
In an instant pot, place 4 sweet potatoes and pressure cook for 4 minutes. Alternatively, you can also cube the sweet potatoes and boil in a large pot of boiling water and cook until fork-tender, about 15 minutes. Drain and set aside.
In a large mixing bowl, mash the cooked sweet potatoes. Add butter, coconut sugar, vanilla extract, cinnamon, nutmeg, and salt. Mix well until smooth and creamy.
Transfer the sweet potato mixture to a lightly greased baking dish, spreading it evenly.
In a separate bowl, combine chopped pecans, all purpose flour, rolled oats, brown sugar, softened butter, cinnamon, and a pinch of salt. Mix until the topping is crumbly.
Sprinkle the pecan-oat topping evenly over the sweet potato mixture.
Bake in the preheated oven for 25-30 minutes or until the topping is golden brown, and the sweet potatoes are heated through.
