Vegan Sweet Potato Casserole

Sweet potato casserole is a beloved and quintessential dish that graces many tables during festive gatherings. This comforting side dish seamlessly blends the natural sweetness of sweet potatoes with a medley of complementary flavors. Often enriched with ingredients like maple syrup, cinnamon, and a hint of vanilla, the mashed sweet potatoes create a luscious, velvety base. The crowning glory is a decadent topping, often featuring a crunchy mixture of pecans, oats, and brown sugar, adding both texture and a delightful contrast to the creamy interior. Ingredients:

  • 4 large sweet potatoes, (Pressure cooked in Instant pot for 4 mins)

  • 1/2 stick softened plant-based butter

  • 1/2 cup coconut or brown sugar

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon salt

Topping:

  • 1 cup chopped pecans

  • 1/4 cup all-purpose flour

  • 1/4 cup rolled oats

  • 1/4 cup brown sugar

  • 1/3 cup softened plant-based butter

  • 1/2 teaspoon ground cinnamon

  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (190°C).

  2. In an instant pot, place 4 sweet potatoes and pressure cook for 4 minutes. Alternatively, you can also cube the sweet potatoes and boil in a large pot of boiling water and cook until fork-tender, about 15 minutes. Drain and set aside.

  3. In a large mixing bowl, mash the cooked sweet potatoes. Add butter, coconut sugar, vanilla extract, cinnamon, nutmeg, and salt. Mix well until smooth and creamy.

  4. Transfer the sweet potato mixture to a lightly greased baking dish, spreading it evenly.

  5. In a separate bowl, combine chopped pecans, all purpose flour, rolled oats, brown sugar, softened butter, cinnamon, and a pinch of salt. Mix until the topping is crumbly.

  6. Sprinkle the pecan-oat topping evenly over the sweet potato mixture.

  7. Bake in the preheated oven for 25-30 minutes or until the topping is golden brown, and the sweet potatoes are heated through.

  8. Remove from the oven and let it cool for a few minutes before serving.
