These truffles are incredibly easy, delicious and healthy. It literally takes 10 minutes, a few whole ingredients, a food processor and viola! So you don't need any more reasons to make this:) You can add or replace with your favorite nuts, dried fruits, freeze-dried fruit, spices, protein powder, nut butters and recreate your own signature truffle. Ingredients
Dates-12, pitted (if using Mejdool dates reduce the quantity to 8-10)
Walnuts -3/4th cup
Almonds -1/2 cup, dry roasted unsalted
Coconut -1/3rd cup, unsweetened, dry & shredded
Unsweetened Cocoa Powder-2 tbsp
Coconut Oil-1.5 tbsp, melted
Cinnamon powder- 1 tsp
Sea Salt- 1/4 th tsp
Optional- Chia seeds, hemp seeds, cocoa nibs, protein powder, almond flour, chocolate ganache, any nut butter
Directions:
In a food processor using the blade attachment process the nuts & shredded coconut until they are crumbly or fine. Remove in a mixing bowl.
Add the dates to the food processor and process to fine bits. Now add rest of the ingredients including the processed nuts in the food processor. Pulse the food processor until everything is mixed throughly. Do not over process otherwise the mixture will become oily. The mixture should be sticky enough to form balls.
Scoop the above dough by heaping tablespoons, then roll between your hands to form balls. If the dough is too sticky, rub coconut oil on your palms to prevent the dough from sticking. The above recipe makes about 14 one oz truffles. Line the truffles on a parchment paper to avoid sticking.
To add a more intense chocolate flavor: Take 1-2 tbsp of cacao powder into a shallow dish or bowl and roll the truffles around to coat. You can also add about 2-3 tsp of cocoa nibs to the mix while mixing it in the food processor. For the ultimate chocolate lover- Refrigerate the truffles for 30 mins-1hr, dip them in dark chocolate ganache and line each on a parchment and refrigerate again till the ganache solidifies.
